If you know how to roast garlic and how to caramelize onions, you'll want to try this easy crepe recipe.

Simply read along and you'll master this delicious meatless main dish in minutes. 


  • 1 cup of sun-dried tomatoes packed in oil, drained and julienned
  • 1 cup of aged swiss cheese such as gruyere
  • 1 recipe of caramelized vidalia onions
  • roasted garlic crepes
  • Chopped parsley, for garnish
  • Make crepes according to directions in How to Make Crepes. Set aside and keep covered. You'll need four crepes for this recipe.

    Cook onions according to directions in How to Caramelize Onions. Preheat oven to 350 degrees.

    Assemble crepes: Lay first crepe on baking sheet. Layer with ¼ cup of sun-dried tomatoes. Top with ¼ cup of onions and ¼ cup of cheese. Fold in half. Repeat with remaining crepes. Bake crepes for 10 minutes or until cheese melts. Sprinkle with parsley for garnish and serve immediately.

    Yield: 4 servings (1 crepe roll each)
