It's an impressive recipe for breakfast or brunch, but simple enough to serve everyday.

Ingredients:

  • 8 eggs
  • 6 tbsp of milk
  • 2 tbsp of butter
  • ½ tsp of salt
  • ¼ tsp of pepper
  • 4 strips of roasted red pepper, diced
  • ½ cup of feta cheese
  • ¼ cup of fresh parsley, chopped
  • basic crepes

First, make crepes according to directions in How to Make Crepes and cover to keep warm. If you made your crepes ahead of time, wrap them in foil and reheat in a 325-degree oven for about 10 minutes or until warmed.

How to scramble eggs: Break the eggs into a large bowl. Add milk and salt pepper. Beat gently until combined. Stir in red pepper.

Melt butter in a large nonstick skillet pan over medium heat. Add egg mixture and stir occasionally until eggs are set, about 5 minutes. Eggs should be firm but not dry.

Assemble crepes: Lay first crepe flat on a serving platter. Sprinkle 1 tbsp of feta cheese in the middle of crepe. Top with one-fourth of scrambled egg mixture. Roll up burrito style. Repeat with remaining crepes. Sprinkle crepes with parsley. Serve immediately.

Yield: 4 servings (1 crepe each)
