Everyone loves blueberry dessert recipes for crepes, especially when you add fresh raspberries and strawberries. And they're healthy too!
For a little crunch, top these crepes with honey and walnuts. This will give the perfect finishing touch, that contrasts so well with the tangy berries.
Ingredients:
Add frozen blueberries to crepe batter and purée. Refrigerate batter. Next, make crepes according to directions in How to Make Crepes. You may also make your crepes ahead of time. You will need 6 crepes for this recipe.
Adding the blueberries gives the batter a blueish / violet color and those cute little blue spots.
For the filling, stir together ricotta cheese, plain yogurt and 2 tbsp of honey. Stir in fresh fruit.
Assemble crepes: Lay first crepe flat on serving dish. Top with ½ cup of yogurt-fruit filling. Roll up burrito style. Top with 1 tbsp of honey and and a few crumbled walnuts. Repeat with remaining crepes.
Yield: 6 servings (1 crepe each)
SideNote: This is especially loved by kids, so be prepared to have them ask for more. The recipe calls for 1 crepe per person, but in our family we often have 2 or even 3 crepes per person.
