Strawberries and Almond Cream in Dark Chocolate Crepes

For actress Rosario Dawson, crepe recipes like this one put the sizzle in her current romance. When she appeared on Live With Regis and Kelly on February 9, 2010, she explained how her boyfriend Mathieu Schreyer, a French DJ, impressed her with his homemade crepe recipes.

"We were friends for a year, and then he busted out with the crepes and ... now we've been together for two years," Dawson said. "He got me with the crepes!" 

On holidays such as Valentine's Day romantic things are fun to do.

We feel sure that Rosario and Mathieu are sharing crepes this holiday! Why not spice up your own special day by making this strawberry crepe recipe and presenting it to your beloved?

Ingredients:

  • 1 cup of sliced strawberries (fresh or frozen, thawed and drained)
  • 8 oz. of mascarpone or cream cheese
  • 3 tbsp of sugar
  • 1 tbsp of almond extract
  • ¼ cup of slivered almonds, toasted
  • chocolate sauce recipe
  • dark chocolate crepes


First, toast almonds following the directions below. 


How to Toast Almonds: Preheat oven to 350 degrees. Cover a baking sheet with tin foil. Spread almonds in a single layer on baking sheet and bake for 10-12 minutes, stirring at least 3 times so that almonds toast evenly and do not burn. Next, make chocolate sauce. Refrigerate for 10 minutes or until you can drizzle it easily.

Combine softened cheese, sugar, and almond extract. Mix well to combine. Fold in sliced strawberries. 


Assemble crepes: Lay first crepe on a flat working surface. Spread with ¼ cup of the strawberry-almond-cheese mixture and fold in half (in a semi-circle) and in half once more to form a triangle. Garnish with a drizzle of chocolate sauce, sliced almonds and an extra berry on top if you wish.
