Because my grandfather has the world's most prolific plum tree, we're always seeking fresh plum recipes.
Simmered in a sauce of brandy, apple juice, and ginger, plums make a tantalizing topping for warm dessert crepes.
In fact...dare I say it?
They're plum good!
And now that fresh plums are available nearly year-round (imported from Chile), you don't have to wait for late summer to make this delicious treat.
Ingredients:
Melt butter in a medium skillet. Add brown sugar and stir to combine. Add brandy. Cook for 1 minute. Stir in apple juice, ginger and plum slices. Simmer for 10 minutes on low heat until plums are tender. Add cornstarch-water mixture and stir until thoroughly incorporated. Let simmer for 2 minutes until sauce is thickened.
Assemble crepes: Place two warm dessert crepes on each plate. Ladle 5-6 plum slices and ¼ cup of sauce over each serving. Serve immediately.
Yield: 4 servings (2 crepes each)
