Enjoy banana recipes? Try our easy banana pudding recipe for crepes. It's based on the famous back-of-the-box nilla wafer banana pudding recipe...but made even better with crepes!
If you like banana dessert recipes, you'll want to try this easy crepe recipe.
It's a no bake dessert that's as delicious as it is easy to make.
Serve these banana crepes warm or chill them for later....if you can wait!
I recommend using the original Nabisco Nilla Wafers - just because they taste sooooo good. But off course you can use any brand of Vanilla wafer cookies if you wish.
Ingredients:
Peel and slice bananas and toss with lemon juice and set aside.
Mix sugar, flour and salt in top of double boiler. Blend in egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened. Remove from heat; stir in vanilla.
Assemble crepes: Lay first crepe flat on serving dish. Spread with one-fourth of the custard mixture and top with 6-8 banana slices. Roll up or fold in quarters. Repeat with remaining crepes. Before serving, garnish with whipped cream and crumbled wafers.
Yield: 4 servings (1 crepe each)
Side Note: Did you know that bananas are really healthy? They're the perfect in-between snack and five you an instant boost of energy. I always have some at home for "emergencies". If you are in a rush and need to run out of the house without breakfast, a banana can save your day :-)
