Whisk together this quick and easy coconut cream recipe.
Then let each family member fill their own crepe and decorate it!
Ingredients:
Mix sugar and cornstarch together, breaking up any lumps. Place in a medium saucepan. Whisk together yolks, milk and cream separately and add to sugar-cornstarch mixture.
Cook over medium heat. Using whisk, stir only occasionally, but take care that the mixture does not boil and remains at a steady simmer. After 5 minutes, stir constantly until it comes to a boil, for another 5 minutes. Let boil for one minute, continuing to stir.
Remove from heat and stir in butter, vanilla, and coconut. Place in a medium bowl and lay a sheet of plastic wrap directly on the surface of the custard to keep a skin from forming. Refrigerate for at least 30 minutes. After it has cooled, remove plastic wrap and whisk again to soften.
Assemble crepes:
Lay first crepe across serving platter.
Spoon or pipe ⅔ cup of coconut cream filling across the center of crepe.
Roll up. Repeat with remaining crepes.
You may serve immediately or chill for up to 8 hours.
Before serving, top with puréed mango and dust with toasted coconut, if desired.
