Tiramisu recipes are famous for combining the flavors of coffee, mascarpone cheese and chocolate.
Our recipe replaces ladyfingers with mocha crepes flavored with coffee. And because we LOVE chocolate, we include a drizzle of our chocolate sauce with grated chocolate for garnish.
Ingredients:
Mix egg yolks, mascarpone, coffee, sugar and cognac in large mixing bowl. Beat 3 minutes. Add mascarpone and beat for 5 minutes more. Set aside.
Whip egg whites together. Once the whites have formed soft peaks, add remaining 2 tablespoons of sugar. Continue beating until stiff peaks form. Add to mascarpone mixture and fold until combined. Chill mixture for 1 hour. Now, proceed with making your mocha crepes and chocolate sauce.
Assemble crepes: Lay first crepe flat on serving dish. Spoon or pipe ¾ cup of mascarpone filling across the center of the crepe. Dust with 1 tsp of cocoa powder and roll up. Repeat with remaining crepes.
Note: You may serve immediately or chill for up to eight hours before serving.
Right before serving, drizzle each crepe with chocolate sauce, top with a dollop of whipped cream, and then sprinkle with grated chocolate. Repeat with remaining crepes and serve immediately.
Yield: 6 servings (1 crepe roll each)
