Beef chuck roast is the perfect cut for tender stews.
If cooked slowly, and especially when paired with dark beer, it renders the tastiest and most fragrant stew in the world.
Add the crepes and a sprinkle of fried shallots, and you've got an unforgettable St. Patricks Day menu.
Ingredients:
Preheat oven to 275 degrees. Toss beef pieces with flour and coat well. Add oil to large skillet over medium high heat. Brown beef on all sides. Remove to an oven-proof 2-quart casserole dish and cover to keep warm. Add remaining oil to pan and cook onions until tender. Add carrots and cook for another two minutes.
Stir together salt, pepper, tomato paste, mustard, worcestershire sauce, beer, and broth and pour over carrots and onions. Stir and cook for about one minute until well combined. Pour mixture over beef chuck roast. Add orange peel and thyme sprigs. Cover with oven-proof lid and place in oven for 2 ½ hours or until chuck roast is tender. Remove thyme and orange peel.
Assemble crepes: Lay first crepe flat on the serving dish. Fill with ½ cup of stew. Roll up both sides. Garnish with parsley and shallots. Repeat with remaining crepes and serve immediately.
