Most yellow squash recipes are bland and overbaked.
But these easy crepes include lightly seasoned and sautéed vegetables that are tender but not mushy.
So when your neighbor hands you yet another basket brimming with squash, you'll be forever grateful!
Ingredients:
First, make crepes and cover to keep warm. If you made your crepes ahead of time, remove them from the refrigerator or freezer, wrap them in foil and reheat in a 325-degree oven for about 10 minutes or until warmed.
Melt oil in a large skillet over medium heat. Sauté squash, zucchini, onion, and garlic for 5 minutes. Stir in pepper, sugar and juice and cook for an additional 5 minutes or until vegetables are tender.
Assemble crepes: Lay first crepe across serving platter. Spoon ½ cup of vegetables across the middle of crepe. Dust crepe with 1 tbsp of parmesan cheese and a sprinkle of fresh parsley. Repeat with remaining crepes and serve immediately.
Yield: 4 servings (1 crepe roll each)
