Ingredients:
Heat water and sugar together in small saucepan until sugar dissolves. Add chocolate chips and melt, whisking until smooth. Remove saucepan from heat until cooled completely. Beat cream and vanilla or orange extract until stiff peaks form. Fold into cold chocolate mixture. Refrigerate for 2 hours or until set. This will not be a stiff mousse; it will resemble light whipped cream.

Assemble crepes: Lay first crepe flat on a serving dish. Ladle ½ cup of mousse inside crepe and roll up or fold in quarters. Top with 1 tbsp of mousse and sprinkle with orange zest and extra chopped hazelnuts, if desired. Repeat with remaining crepes. Serve immediately.
