But as much as we love salty tortilla chips, they're not very healthy.
For an unexpected alternative, serve your sausage inside warm crepes!
Ingredients:
Cut cheese into small cubes. Brown and drain sausage. Add cheese and stir until melted. Add drained Rotel tomatoes. Bring to a simmer and cook until mixture is heated through.
Fold in half and then again, in quarters. Repeat with remaining crepes. Bake for 10-12 minutes or until crepes are warmed and slightly crispy.
Assemble crepes: Lay first crepe across serving platter. Spoon ⅔ cup of sausage dip across half the crepe. You may roll in half or in quarters as pictured. Sprinkle with dried parsley, if desired.
