Seeking recipes with ham? Try our Croque Madame Recipe for Crepes. This easy brunch recipe is reminiscent of a Sunday morning at a French bistro. It's based on France's national sandwich—the croque monsieur—and features a quick bechamel sauce plus ham, melted Swiss cheese and a fried egg. 




My son has always been a fan of grilled cheese. So on his first trip to Paris, he insisted on ordering a croque monsieur at every stop.

For our version, we added an egg—it is brunch, after all—which turned it into a croque madame. But it's equally delicious without the egg.

As the French would say: Á chacun son goût or, to each their own taste! 

Ingredients:

  • ½ cup of sour cream
  • 1 tbsp of Dijon mustard
  • 2 tsp of garlic powder
  • 8 slices of very thinly sliced deli-quality ham (We used Virginia baked ham)
  • 1 cup of grated swiss cheese
  • 2 eggs, fried sunny-side up, to your preferred level of doneness
  • basic crepes
  • salt and pepper, to taste
  • Parsley, chopped, for garnish

Mix together sour cream, mustard and garlic in a small bowl. Lay first crepe flat on a working serving. Spread 1 teaspoon of sour cream mixture across bottom of crepe.

Top with 1 tbsp of cheese. Fold in half. Spread top of crepe with 1 tsp of sour cream mixture. Cover with 1 more tablespoon of cheese. Move crepe to a foil-lined baking sheet. Repeat with remaining crepes.

Place baking sheet under broiler until cheese melts and begins to brown. Remove from oven and keep warm while you prepare the eggs. Once eggs are done, top each folded crepe with one egg and sprinkle with salt, pepper, and parsley garnish. Serve immediately.

Yield: 4 servings (1 crepe each)
