If you like crepes suzette, you'll love this easy version featuring the fresh flavors of lemon and lime.
You can add the limoncello if you like, but it's not necessary. I happened to have some in my freezer and thought it added extra zip!
Whatever you do, don't forget the vanilla ice cream and fresh zest!
Ingredients:
Mix sugar and cornstarch and place in small saucepan. Add water and bring to medium heat until sauce comes to a boil. Let it simmer until it thickens. Remove from heat. Add butter and stir until it melts. Whisk in zest, lemon and lime juices and limoncello.
To assemble crepes: Fold the first three crepes into triangles. Top with a scoop of vanilla ice cream and several tablespoons of warm sauce. Repeat with remaining crepes and sauce. Serve immediately.
