My father has a client who brings him a fresh pineapple every week! I'm not sure where Wayne gets this fruit—it's not grown in North Carolina—but we sure are appreciative.
In Wayne's honor we developed this dessert crepe, one of our favorite simple dessert recipes.
Ingredients:
Preheat grill to medium high heat. Place pineapple on grill and cook until heated, about 1 minute on each side.
Brush first side liberally with sauce, turn over and grill for an additional minute or until sauce caramelizes. Repeat with remaining side. Once grilled, slice each ring into 1-inch pieces.
Assemble crepes: Lay first two crepes flat on a serving dish. Fill each crepe with 5-6 pieces of pineapple. Drizzle with rum raisin sauce. Fold in half, then in quarters. Top crepes with 1 scoop of ice cream and drizzle again with sauce. Repeat with remaining crepes.
Yield: 4 servings (2 crepes each)
