Our mini crepes are the perfect finger food, one or two delicious bites and they're gone. Just be sure to make enough of them!
The recipe makes 10 appetizers, but I recommend to multiply the ingredients and make at least 2 mini crepes per expected guest. I can guarantee, there won't be any left overs!
Ingredients
Make crepes using a 6-inch skillet, which will yield 4-inch crepes.
If you made your crepes ahead of time, remove from refrigerator (or freezer), wrap them in foil and warm in a 325-degree oven for 10 minutes until heated through.
Meanwhile, melt butter in medium skillet. Add pears, lemon juice, and brown sugar.
Cook until pears soften; stir in one tablespoon of cornstarch. Simmer for 1 minute.
Spread 2 tablespoons of pears on each crepe. Add a small slice of brie cheese and 1 teaspoon jam.
Roll up each crepe as pictured above. Add fresh raspberries to garnish. Serve immediately.
Yield: 10 servings (1 miniature crepe roll each)
