Chicken, diced ham and mushrooms are combined with a savory bechamel sauce and rolled up in a warm crepe topped with a gratineé of cheese.
Personally I prefer it without ham, but my family thinks, the ham is indispensable. So I fulfill their wishes.
Once you've done the recipe several times, you can start experimenting. Add different herbs and spices for a totally different taste.

Ingredients:
Melt butter in a medium saucepan. Add shallot and sauté until transparent and softened, about 2 minutes.
Add flour and stir well until absorbed (about 1 minute). Stir in milk, salt, and pepper.
Cook over medium heat until sauce is bubbly and thick. Add ¼ cup of cheese. Stir together until cheese melts. Reserve ½ cup of sauce and set aside.
Add in chicken, ham and mushrooms. Stir until thoroughly combined with sauce. Remove from heat.
Assemble crepes. Add one-eighth of the mixture inside the first crepe. For an impressive presentation, roll up each side vertically and then horizontally or burrito style.
Repeat with remaining crepes. Arrange crepes side by side in an oiled 9" x 13" baking dish. Drizzle each crepe with 1 tbsp of reserved sauce and 1 tbsp of remaining cheese. Bake for 20 minutes or until cheese melts. Before serving, garnish with parsley.
Note: For a quick start, use a rotisserie chicken. A small chicken will yield about 2 cups of shredded chicken. This is also great way to use up your ham leftovers!
